Plastic oil lines have to be kept well away from the exhaust system for obvious reasons. If using copper it's a good idea to make a loop in the line for vibration failure resistance..

On the dyno, I typically use the oil galley plug that aligns with the #2 main for the oil pressure and oil temperature hookup.  That location is used simply due to it clearing some of the other dyno hook ups.  Any of those ¼”NPT plugs on the oil filter side of the block would be a suitable location to get an oil pressure reading.

There's a couple more plugs in line forward of that. Assuming they come out, use what's easiest to get to.

That location didn't work on my car. The clutch bracket wouldn't allow it. There is a plug in the block close to the oil filter. I put mine there.

Most common/simplest is to instal a brass 'T' fitting between stock sensor switch & block. Plastic or copper line is cheapest, but I opted for one of the reinforced hose kits sold by aftermarket speed equip. suppliers.
