I’d like to increase the length of the intake manifold carburetor mounting studs on my 312 for a thicker gasket. Can this be done?

Not difficult. The original shorter studs can be removed by double nutting them and backing them out. It would be prudent to cover or block the intake holes with something to prevent the possibility of nuts and/or studs dropping into the intake while making the switch.

You usually can get longer studs at your local hardware store

Longer studs usually come with any adapter you might use if you shop around for the appropriate adapter. Joe-JDC

If your needing an additional gasket for insulation I would suggest a fiber or phenolic one. I bought mine off the bay and they have 1/4, 3/8, & 1/2” available. I use 3/8” and use a black felt marker on the edges.

If you have a T Bird you have to be careful with hood clearance. Passanger car not so much.

Right - about 1/4 inch with a stock air cleaner is about max - otherwise the wing not hits the hood -as me how I found out slumlord444 (10/29/2020)

My '55 TBird has a 1/2" spacer under my Holley carb with no hood clearance issues. I ditched the stock air cleaner.

Number one, the Holley is shorter than a teapot. Second, using and aftermarket air cleaner also helps.
With a stock teapot and factory air cleaner not much extra room.
