I was not sure and wondering if there would be any problems with electrolysis if I used a plated steel heater hose connection into an aluminum intake manifold?

Not sure on the electrolysis but I would suggest not using stainless on aluminum unless you use an anti-sieze compound. The stainless will gall the threads in the manifold and not only ruin the threads but make it extremely difficult to remove if need be.

I recall there was a discussion on stainless galling in the past, but of course I can't find it...w00t

I use ARP anti seize or, in your situation Arp pipe seal which sounds similar to the Tef-gel
